Groffier, R.
Robert Groffier is considered one of the finest winemakers in the Cote d'Or. He has seven hectares of top vineyard land, including Chambolle-Musigny, Bonnes Mares and  Chambertin Clos de Beze. Serge Groffier, Robert's son, has since taken over and instills low yields in the vineyards which lead to wines of real breeding and class. Groffier is similar to many top winemakers in that his winemaking techniques are flexible and vary from vintage to vintage. Some years he includes stalks in his fermentation and some years he does not. Each year he will do a cold maceration for five to six days followed by a hot fermentation that extracts lots of color and flavor.
