Bollinger
The history of Bollinger dates back to 1829 when Hennequin de Villermont, Paul Renaudin and Jacques Bollinger established the House in Aÿ. Today, Bollinger maintains more than 160 hectares of vineyards dominated by Pinot Noir vines. All of the wine spends extended periods of time aging on the lees, contributing to the complex flavor of the wine. At disgorgement, Bollinger wines are given a low dosage to maintain the balance and flavor of the wine.
