The classes have been imaginatively designed by New York Vintner’s Director of Education and certified sommelier, Dylan York.


A highly knowledgeable and engaging wine educator, Dylan has been working in the wine business since 1996, having gained significant experience in a variety of wine-related fields including restaurants, retail, import and distribution. In 2009 he worked the Harvest in Washington State, where he was employed as Production Supervisor for white wine production, before joining New York Vintners in 2010.


Dylan is currently enrolled in a diploma program with The Wine & Spirits Education and Trust, pursuing the prestigious ‘Master of Wine’ title.

If you are curious about what wines are most suitable for aging, this is the class for you!


Whether you have just started your own wine collection or adding to your existing one, we will provide you with expert advice regarding the type of wines to purchase and crucially, how then to correctly store them in your wine fridge or cellar to ensure they develop into the gems they are supposed to become.


To enhance your learning experience, Dylan has designed a tasting that specifically features wines with age and those that will stand the test of time.


Aging wine correctly takes time, patience and the ideal storage environment. Thanks to our great relationship with Sub-Zero Wolf, we can offer class participants appealingly-priced deals on their entire line of temperature controlled wine storage units.

The Best of Washington State

Each wine region has two types of wineries: mainstream and boutique.


Typically, it is the mainstream wineries we first become familiar with and then, further down the line, we are privy to the boutique ones, which often produce more interesting wines.


Washington State is currently producing some of the finest quality, full-bodied red and white wines in the country. The class will provide you with a unique opportunity to taste some of them, while also learning more about this under-appreciated wine region.


Before moving to New York City, Dylan worked for a winery in Walla Walla, Washington and discovered some fantastic wines. Drawing from his experience, he has designed an exciting lineup of hand-picked, boutique Washington wines for you to taste, from some of the most talented winemakers in the region.

USA vs. France is the ultimate tasting challenge that will change forever how you view American and French wines.  


In this highly enjoyable tasting we will pair varieties and styles of wines against each other ... and you will be the judge of which wine is superior! When the bottle is covered you will be amazed at how you evaluate what is in your glass.

Blind Tasting: Rare Varietals


Even though Washington State is an underdog region of wine production in the United States, it nevertheless produces some fantastic rich and powerful wines from varietals like Cabernet, Merlot, Syrah and Sangiovese.

Sparkling wines should not only be reserved for special occasions. In fact sparkling wines sit comfortably at any event and, contrary to popular belief, sit equally comfortably with many foods.


Sample Champagne from France, Lambrusco and Prosecco from Italy, and even a sparkling from Japan and discover some unique food pairings for these effervescent wines.
